Inspiring Brunch: Gluten Free Belgian WafflesI mostly blog about Drupal, the web content management system and my photos. This post is a bit different and that's because I recently developed an intolerance for gluten. It's been tricky and challenging finding the right foods to eat but rewarding and healthy at the same time.

Today my lovely wife made homemade gluten free Belgian Waffles using Bob's Red Mill Gluten Free Pancake Mix topped with berries and maple syrup and they tasted delicious. She also used a banana as an egg substitute. At the same time I was inspired to document this wonderful meal with photos. It was nice to have the feeling again of being able to eat what felt like "normal" food. Enjoy the photos!
